Marble Cake Recipe

You will need.....       8 oz. self raising flour, sieved

                               6 oz. butter or margarine                           

                               6 oz. castor sugar                                                      

Preparation Time      3 eggs, lightly beaten

15 minutes                few drops vanilla essence

                              few drops almond essence

Cooking Time           green food coloring

45 minutes                pink food coloring 

                            

Oven setting           

350ºF; Gas Mark 4     

 

Cream together fat and sugar until light and fluffy. Gradually add the beaten eggs and fold in the flour. Divide the mixture into three. To one-third and a few drops almond essence and green coloring; mix thoroughly. To another third, add a few drops vanilla essence and pink coloring; mix thoroughly. Leave the remaining third untouched.

 

Drop the mixtures, in alternating spoonfuls, into a well greased fluted cake mould (savarin tin) and bake in the centre of a moderate oven for 40-50 minutes.

 

Turn out and cool on a wire tray.

 

Quick Tip

 

To cream fat easily: remove from refrigerator or larder half an hour before use. If it is still too hard to cream, warm the mixing bowl with hot water and dry it before putting the fat in. Heating the fat itself causes it to become oily.
