Madeira Cake Recipe

You will need.....       8 oz. self-raising flour

                               1/4 level teaspoon salt                             

                               4 oz. butter

                               5 oz. castor sugar

                               2 eggs

Preparation Time      few drops vanilla essence

15 minutes                about 3 tablespoons milk

                               For the top:

Cooking Time           3 slices citron peel

1 hour  

 

Oven setting           

350ºF; Gas Mark 4     

 

Sift together the flour and salt and set aside. Cream the butter and sugar until soft and light. Gradually beat in the blended eggs and essence, adding a little flour with the last few additions. Using a metal spoon, fold in the remaining flour and enough milk to mix to a soft consistency.

 

Spoon the mixture into a greased and line 6-inch round deep cake tin. Place in the centre of a moderate oven and bake for 1 hour. After 50 minutes place the slices of peel on the top of the cake (see Quick Tip below). Return to oven for the remaining 10 minutes. When baked, the cake should feel firm to the touch and a warmed skewer pushed into the centre should come out cleanly.

 

Allow the baked cake to cool for 5 minutes in the tin before cooling on a wire tray.

 

Quick Tip

 

After 50 minutes place peel on the cake gently, where the crack appears. The peel is not put on the raw mixture as, being heavy, it would just sink into the cake.
