Glace Pineapple Ring

You will need.....       8 oz. self-raising flour

                               6 oz. butter                             

                               6 oz. castor sugar

                               3 eggs, beaten

                               3 tablespoons milk

Preparation Time      2.5 oz glace cherries, quartered

20 minutes                 1 oz. glace pineapple, chopped

                               For the topping:

Cooking Time            1.5 oz. icing sugar, sieved

55-60 minutes            glace pineapple, quartered             

                               glace cherries

Oven setting           

350ºF; Gas Mark 4     

 

Well grease and line a savarin mould. Sieve flour into a bowl. In another bowl cream together butter and sugar until pale and creamy. Beat in egg a little at a time, beating well after each addition. Add a tablespoon of flour with last amount of egg. Fold rest of flour into mixture, then add milk, cherries and pineapple.

 

Turn mixture into prepared tin and bake in a moderate oven for 55-60 minutes. Turn ring out and cool on a wire tray.

 

Mix icing sugar with enough warm water to make a thin glaze icing. Spread a layer on top of ring, and arrange the pineapple and cherries. Then trickle remaining icing over fruit letting some run down the sides. Leave icing to set before putting into a cake tin.

 

Quick Tip

 

If glace pineapple is not available use chopped almonds, raisins and cherries in the mixture. Decorate with chopped almonds.
