Frosted Walnut Cake Recipe

You will need:-

4 oz. self raising flour, sieved

pinch salt

4 oz. butter or margarine

4 oz. castor sugar

2 eggs, lightly beaten

4 oz. walnuts, shelled

For the filling and covering:-

1 lb. granulated sugar

¼ pint cold water

2 egg whites, stiffly whisked

 

Preparation Time:- 30 minutes

 

Cooking Time:- 30 minutes

 

Oven Setting:- 350°F; Gas Mark 4

 

Chop the walnuts reserving 7 halves for the top (see Quick Tip below). Make up the basic sponge mixture (see method, Strawberry Cream Gateau Recipe) adding the chopped nuts with the flour. Divide mixture equally between 2 well greased 6-7 inch sandwich tins. Bake in the center of a moderate oven for 25-30 minutes. Turn out and cool on a wire tray.

 

Dissolve the sugar in the water, stirring continuously, and then allow to boil, without stirring. Keep the mixture boiling until a teaspoonful dropped into cold water forms a soft ball. Pour the syrup on to the stiffly whisked egg white. Whisk until mixture is thick and will coat the back of a wooden spoon. Quickly spread a layer in the center of the cake and sandwich together. Pour the remaining icing over the top and sides swirling decoratively.

 

Decorate the top with the 7 walnut halves.

 

Quick Tip

 

To chop: place nuts on a chopping board and use a sharp, pointed knife. Move the handle and blade up and down and work right to left across the board keeping the point of the knife down. Confine the chopping to the center of the board.
