Family Fruit Cake Recipe

You will need ......     5 oz. plain flour

                              5 oz. self-raising flour

                              8 oz. butter

                              8 oz. soft brown sugar

                              grated rind of 1 orange

Preparation Time      5 eggs

15 minutes                1 lb. mixed fruit

                              4 oz. peel, finely chopped

Cooking Time           4 oz. glace cherries, quartered

2 hours 30 minutes     1 tablespoon black treacle

 

Oven Setting

310ºF; Gas Mark 2

 

Grease and line an 8-inch cake tin with greased greaseproof paper. Sieve the flours together.

 

Cream together the butter, sugar and orange rind until the mixture is pale and creamy. Add the eggs a little at a time, beating well after each addition. Fold in the flour alternately with the dried fruit, peel and cherries. Finally, blend in the treacle. Turn the mixture into the prepared tin and bake in a very moderate oven for 2.5 hours or until a skewer inserted in the centre comes out clean.

 

Remove the cake from the oven and leave to cool in the tin for 10 minutes. Turn in out on a wire tray to finish cooling; remove paper

 

Quick Tip

 

This cake makes far better eating when it has been well cooled, then stored and matured for at least a week in cake tin or wrapped in foil.
