Devil's Food Cake Recipe

You will need:-

3 oz. self raising flour

1 dessertspoon cocoa

pinch salt

4 oz. butter or margarine

4 oz. castor sugar

2 eggs, lightly beaten

few drops vanilla essence

For the marshmallow frosting:-

4 oz. (25) marshmallows

2 tablespoons milk

2 egg whites

1 oz. castor sugar

For the decoration:-

chocolate vermicelli

 

Preparation Time:- 20 minutes

 

Cooking Time:- 30 minutes

 

Oven Setting:- 350°F; Gas Mark 4

 

Sieve flour and salt together. Cream fat and sugar until light and fluffy. Beat in eggs, one at a time. Fold in the dry ingredients and vanilla essence using a skewer to measure (see Quick Tip, Peppermint Cream Cakes Recipe). Divide mixture equally between 2 well greased 6-7 inch sandwich tins. Bake in the center of a moderate oven for 25-30 minutes. Turn out and cool on a wire tray.

 

Make the marshmallow frosting. Melt the marshmallows slowly in the milk, then leave to cool, stirring occasionally. Beat the egg whites and sugar until stiff and peaky, fold into the marshmallow. Leave to set a little.

 

Use to fill the center of the cake and coat the top and sides. Sprinkle a little chocolate vermicelli on the top.

 

Quick Tip

 

To test a sponge: press lightly with thumb on center of cake. If ready, it will spring back immediately and the sides of the cake will have shrunk from the tin. Also, listen to the cake. if you can hear it gently sizzling it is not quite done.
