Congress Tarts Recipe

You will need.....       4 oz. plain flour

                               pitch salt                           

                               1 oz. margarine

                               cold water to mix                              

Preparation Time      For the filling

20 minutes                2 oz. butter or margarine

                              2 oz. castor sugar

                              1 egg, lightly beaten

Cooking Time           1 oz. ground almonds

30 minutes                1 oz. self-raising flour, sieved

                              few drops almond essence                            

Oven setting            few drops vanilla essence

350ºF; Gas Mark 4      2 tablespoons jam

 

Sieve flour and salt together. Add the fat cut into small pieces. Rub in with the fingertips until mixture resembles fine breadcrumbs. Add a little water and mix with a palette knife until mixture holds together but is not sticky. Knead well. Roll out thinly on a lightly floured board and cut into 3 inch circles with a pastry cutter. Line two bun trays with the pastry.

 

Cream the butter and sugar together, add the egg and beat well. Add the remaining ingredients for the filling and mix to a soft consistency.

 

Put a little jam in each tart and a teaspoonful of filling. Bake in a moderate oven for 30 minutes. Cool on a wire tray.

 

Quick Tip

 

Adding a pastry decoration: roll out pastry trimmings, cut in narrow strips 1/4 inch wide and 2 inches long. Lay two strips criss-cross on top of each tart before baking.
