Chocolate Cream Gateau Recipe

You will need :-

4 eggs

4 oz. castor sugar

3 oz. self raising flour

1 oz. cocoa

3 tablespoons oil

For the filling and topping:-

½ pint double dairy cream

¼ pint single dairy cream

4 oz. castor sugar

½ teaspoon vanilla essence

For the decoration:-

cherries (or other fruit)

pineapple pieces

 

Preparation Time:- 30 minutes

 

Cooking Time:- 45 minutes

 

Oven Setting:- 350°F; Gas Mark 4

 

Whisk eggs and sugar until thick and creamy and whisk leaves a trail when lifted out of the mixture. Fold in sieved flour and cocoa. Carefully fold in oil. Turn into a greased and line 8 inch cake tin. Bake in a moderate oven for about 45 minutes or until cake springs back when lightly touched with the tip of the finger. Turn out and cool on a rack.

 

Split cake into three. Lightly whip double and single cream until just thick. Beat in sugar  and vanilla essence.

 

Spread some of the cream over bottom two rounds of cake and re-stack together. Spread cream over top, put remaining cream into a piping bag with a large star pipe. Pipe all over the sides. Decorate with cherries and pineapple pieces.

Dairy cream cakes should be stored in a box or cake tin and placed in the bottom of a refrigerator or cold larder.
