Cherry Nut Gateau Recipe

You will need:-

4 oz. margarine

4 oz. castor sugar

1 dessertspoon honey

2 eggs

5 oz. self raising flour, sieved

½ level teaspoon baking powder

few drops almond essence

3 tablespoons milk

For the decoration:-

8 oz. icing sugar, sieved

2 tablespoons water

1 oz. butter

2 oz. icing sugar, sieved

green food coloring

8 walnut or almond halves, 8 glace cherries

 

Preparation Time:- 20 minutes

 

Cooking Time:- 20 minutes

 

Oven Setting:- 375°F; Gas Mark 5

 

Slice the fat and put into a slightly warm mixing bowl together with all the remaining ingredients. Beat with a wooden spoon until smooth. Spread into a well greased 7 inch square tin and bake in a moderately hot oven for 18-20 minutes. Turn out and cool on a wire tray.

 

Add the water gradually to the 8 oz. icing sugar and beat well into of a coating consistency. Pour over the cake and smooth with a palette knife, moistened if necessary. At this stage the edges of the cake can be trimmed if the icing has trickled down.

 

Beat the butter until soft and creamy, add the icing sugar and green coloring. Beat well. Using a greaseproof piping bag, (see Quick Tip below), pipe the lines to form the 16 squares and decorate alternately with nuts and glace cherries.

 

Quick Tip

 

To make a piping bag: cut a 10 inch square of paper, fold it diagonally. Crease the center of the fold and roll the two sharp points round and up to meet the right angle. Fold to secure the point. Cut off the end to take a small icing tube.
