Almond Spring Gateau Recipe

You will need:-

4 oz. self raising flour

pinch salt

4 oz. butter or margarine

4 oz. castor sugar

2 eggs, lightly beaten

few drops vanilla essence

2 tablespoons apricot jam

For the decoration:-

4 oz. butter

6-8 oz. icing sugar, sieved

few drops almond essence

few crystallized violets

 

Preparation Time:- 15 minutes

 

Cooking Time:- 15 minutes

 

Oven Setting:- 375°F; Gas Mark 5

 

Sieve flour and salt together. Cream fat and sugar until light and fluffy. Beat in eggs, one at time. Fold in the dry ingredients and add the vanilla essence. Put into a well greased Swiss roll tin approximately 12 x 9 inches. Bake in a moderately hot oven for 15 minutes. Turn out and cool on a wire tray and trim the edges whilst the cake is still warm.

 

Make the butter cream by beating the butter until soft and creamy, add the almond essence. Add the sieved icing sugar a little at a time beating well.

 

Place the cake on a flat surface and divide into three (see Quick Tip below). Soften the jam by gently warming and use to sandwich the cake together. Coat the cake with the butter cream, smoothing the sides and swirling decoratively on the top. Pipe shells along the top edge and decorate with crystallized violets.

 

Quick Tip

 

To make sure of a straight edge when trimming a cake place cake on a flat surface. Using a sharp, serrated edge knife cut with one movement using a cake ruler as a guide.
