Honey Loaf Recipe

You will need.....       12 oz. self-raising flour

                               1 level teaspoon salt                         

                               3 level teaspoons mixed spice

                               2 oz. candied peel

                               4 oz. soft brown sugar

Preparation Time      6 oz. clear honey

10 minutes                1/4 pint milk

                               For the topping:                              

Cooking Time           1 oz. lump sugar

1 hour 15 minutes          

      

Oven setting           

350ºF; Gas Mark 4     

                              

Line and grease a 2-lb. loaf tin. Chop the peel finely. Sift together flour, salt and spice, mix in peel and brown sugar. Add honey and milk, and blend together until a smooth, stiff dough is formed.

 

Place in loaf tin. Lightly crush the lump sugar and sprinkle over the top of the loaf. Bake for about 1 1/4 hours in a moderate oven.

 

Turn out and cool on a wire tray. A little more sugar can be sprinkled on top on the loaf if liked; serve sliced and spread with butter.

 

Quick Tip

 

When cooking with yeast, store dried yeast in a tightly lidded tin in a cool place. It will keep for up to 6 months. Dried yeast can be bought from chemists, delicatessens or good grocers.
