Gingerbread Recipe

You will need.....       4 oz. margarine

                               6 oz. black treacle                          

                               2 oz. golden syrup

                               2 oz. brown sugar

                               1/4 pint milk

Preparation Time      2 eggs

10-15 minutes            8 oz. plain flour

                               1 rounded teaspoon mixed spice

Cooking Time            1 level teaspoon bicarbonate of soda

1 1/4-1 1/2 hours       2 level teaspoons ground ginger

                               4 oz. sultanas

Oven setting            

310ºF; Gas Mark 2    

 

Grease and line a 7-inch square cake tin. Using a large saucepan, warm together margarine, treacle, syrup and sugar. Add milk and allow to cool. Beat eggs and blend with cooled mixture.

 

Sift dry ingredients together into a bowl, add the cooled mixture and sultanas folding in gently with a tablespoon.

 

Turn into the greased and lined tin. Bake in a slow oven for 1 1/4- 1 1/2 hours. Turn out and cool on a wire tray.

 

Quick Tip

 

To vary the gingerbread : use equal quantities of white flour and whole meal flour or add 4 oz. dried figs or chopped dated instead of sultanas or add 2 oz. each of crystallized ginger and shredded almonds.
