Doughnuts  Recipe

You will need.....       8 oz. plain flour

                               1/2 teaspoons salt                         

                               1 egg, beaten

                               For the yeast liquid:

Preparation Time      2 level teaspoons dried yeast

15-20 minutes            1/4 pint warm milk less 3 tablespoons

                               1/4 teaspoons castor sugar

Cooking Time            2 oz. plain flour

4 minutes                  For the filling:

                               3 tablespoons raspberry jam

Fat temperature        For the coating:

370ºF                       2 oz. castor sugar

                              1/2 teaspoon cinnamon

 

Blend yeast with warm milk (110ºF), sugar and 2 oz. flour. Leave until frothy, about 20-30 minutes. Mix salt and remaining flour together. Add to yeast mixture with beaten egg and melted butter, mix well.

 

Knead dough well on a lightly floured table and divide into 8 equal pieces. Roll into rounds (see method, recipe Rolls), cover with a greased polythene sheet and leave to rise for about 30 minutes at room temperature. Remove polythene. Make a hole in the middle of each round with handle of wooden spoon. Fill with 1/2 teaspoon of jam and pinch into shape.

 

Deep fry in hot fat, 370ºF, for 4 minutes. Drain on crumpled absorbent paper and roll in mixed sugar and cinnamon.

 

Quick Tip

 

Risen dough should double in size and spring back when lightly pressed with a floured finger. The time will vary according to the temperature; cold merely retards the growth of yeast and only extreme heat destroys it.
