Barm Brack Recipe

You will need.....       3/4 pint cold tea

                               7 oz. soft brown sugar                         

                               12 oz. mixed dried fruit

                               10 oz. self-raising flour

                               1 egg

                             

Preparation Time      

10 minutes               

 

Cooking Time           

1 hour 45 minutes

 

Oven setting            

350ºF; Gas Mark 4    

 

Put tea, sugar and fried fruit in a bowl, cover and leave to soak overnight. Tea that has been leftover during the day can be saved and used. Well grease an 8-inch round cake tin, or a 2-lb. loaf tin.

 

Mix the soaked fruit and sugar plus the liquid into the flour. Add the beaten egg to make a smooth mixture. Turn into the tin and bake in a moderate oven for about 1 hour 45 minutes.

 

Serve sliced with butter.

 

Quick Tip

 

For electric mixer owners, use dough hook attachment for yeast dough's. Mix dough on lowest speed for 1 minute, then 2 minutes at a slightly higher speed to knead the dough. The manufacturer's instructions should be read carefully.
