Cooking slowly until the food is tender. It is done in just enough liquid to cover the food, as the liquid is served with it and should be rich. Stews may be cooked in covered saucepans or casseroles, either on a hotplate or in the oven. A method of cooking food in stock or water at a low temperature. The meat is usually browned first with vegetables in a little oil before the stock is added.
