Spicy Stuffed Cabbage Leaves Recipe

You will need :-

8 large cabbage leaves

1 tablespoon cooking oil

1 medium onion, chopped

1lb. raw minced beef

14 oz. can tomatoes

2 teaspoons cornflour

2 tablespoons Worcestershire sauce

¼ teaspoon dried mixed herbs

1 tablespoon chopped parsley

salt and pepper

Sauce:-

1 tablespoon tomato puree

2 teaspoons cornflour

1 teaspoon Worcestershire sauce

½ teaspoon sugar

salt and pepper

Oven Setting:- 375°F; Gas Mark 5

Boil a large pan of water and put in the cabbage leaves. Cook for 2 minutes and drain well. To make the stuffing for the leaves, heat the oil in a pan and fry the onion gently for 5 minutes. Add the beef and fry until browned, stirring all the time. Drain the tomatoes and keep the juice for the sauce. Add the tomatoes to the meat mixture. Blend the cornflour with the Worcestershire sauce and stir into the meat mixture with the remaining stuffing ingredients. Cover the simmer for 20 minutes, stirring occasionally.

Divide the stuffing between the cabbage leaves and roll up, folding over edges of leaves to enclose the meat completely. Place in greased shallow ovenware dish, cover and bake in a moderate oven (375°F; Gas Mark 5) for 20 minutes.

Meanwhile, for the sauce, blend the juice from the canned tomatoes with the tomato puree, and make up to ½ pint with water. Blend the cornflour with 1 tablespoon of tomato juice. Put all the ingredients in a pan, bring to the boil and stir. Reduce heat and cook gently for 3 minutes. Season to taste. To serve, pour the sauce over the cabbage leaves, and serve with boiled rice or creamed potatoes.
