Polder Pie Recipe

You will need :-

2 oz. butter

1 large onion, chopped

1 clove garlic, crushed

1 lb. raw minced beef

1 teaspoon dried basil

1 oz. plain flour

¼ pint beef stock

salt and pepper

1 large aubergine

8 oz. tomatoes

1 lb. potatoes, mashed

3 oz. Edam cheese

 

Oven Setting:- 400°F; Gas Mark 6

 

Melt half the butter and fry onion and garlic gently until soft but not brown. Add the meat and fry for 10 minutes, stirring occasionally. Stir in the basil, flour and stock and continue cooking until the mixture thickens. Add salt and pepper to taste and pour into an ovenware dish.

 

Melt the remaining butter and fry slices of aubergine until soft. Arrange them on top of the meat. Skin and slice the tomatoes and arrange on top. Mix together the mashed potatoes and cheese and some milk if necessary to make a soft mixture. Season. Pipe or spoon the mixture around the edge of the dish. Bake in a moderately hot oven (400°F; Gas Mark 6) for 30 minutes until golden brown. This is a good dish to prepare in advance without the final baking. Keep in the refrigerator and bake when needed, allowing an extra 10 minutes.
