Chilli Con Carne Recipe

You will need.....      1 tablespoon salad oil

                              1 oz. butter

                              2 medium onions, finely chopped

                              2 cloves garlic, crushed

                              4 oz. bacon trimmings

Preparation Time     1 1/2 lb. stewing steak

15 minutes               2 1/4 oz. can tomato puree

                              3/4 pint water

Cooking Time          salt and pepper

3 hours                   1/2 to 1 level teaspoon chilli powder

                             16 oz. can red kidney beans, drained

 

Heat oil in a pan, add butter and fry onion and garlic until soft and pale golden brown. Remove from pan and put to one side. Cut bacon trimmings into 1/2-inch pieces and steak into 3/4-inch cubes. Add to pan and fry until pale golden brown.

 

Replace onion and garlic in the pan, add tomato puree, water, salt, pepper and chilli powder. Bring to the boil, cover and let it simmer for 3 hours.

 

Add the kidney beans and simmer for a further 10m minutes. Adjust seasoning. Serves 4

 

Quick Tip

 

If you have difficulty in getting red kidney beans use a 16 oz. can of baked beans in tomato sauce. The flavor is different but, with children more popular.
