Carbonnade of Beef Recipe

You will need.....       1 1/2 lb. chuck steak

                               1 oz. butter

                               2 tablespoons salad oil

                               2 medium onions, chopped

                               1 level tablespoon flour

Preparation Time      1/2 pint light ale

15 minutes                1/4 pint water

                               pinch dried thyme           

                              1/4 teaspoon garlic powder or

                               1 clove garlic, finely crushed                             

Cooking Time            bay leaf

2 hour                       1 level teaspoon sugar

                               salt and pepper

 

Cut beef into strips, 1-inch wide, 2 inches long and about 1/2 - inch thick. Melt butter in a pan with oil and brown meat quickly on all sides.

 

Remove meat from pan, add onions to fat and fry until golden brown. Blend in flour and cook for 1 minute. Blend in light ale and water, then bring to boiling point and simmer until thickened.

 

Add meat, thyme, bay leaf, sugar and seasoning. Cover pan and similar over a very low heat for 2 hours or until meat is tender. Serves 4

  

Quick Tip

 

If you are having a big cooking session keep a jug of hot water handy for rinsing knives, forks and spoons so that they are ready to use again immediately.
