You will need :- 2 lb. shin beef 1 oz. plain flour salt and pepper 4 oz. butter 3 medium onions 3 cloves garlic ¾ pint red wine ¾ beef stock 1 bay leaf 4 oz. streaky bacon 8 oz. small button mushrooms
Cooking Time:- 10 minutes
Oven Setting:- 325°C; Gas Mark 3
Cut the meat into cubes and toss lightly in the flour seasoned with salt and pepper. Brown lightly in half the butter and put into a casserole. Chop the onions and garlic and cook until golden in the same butter. Put into the casserole and add the wine and stock, which may be made from a stock cube. Add the bay leaf. Cover and cook in a moderate oven (325°C, Gas Mark 3) for 2 hours. Cut the bacon into thick strips and fry in the remaining butter until just colored. Add the whole mushrooms and stir well in the butter and bacon mixture until cooked. Add to the beef stew and continue cooking for 10 minutes.
