Boeuf Stroganoff Recipe

You will need :-

1 lb. fillet or good rump steak

3 medium sized onions

2 oz. butter

1 green pepper

8 oz. button mushrooms

salt and pepper

¼ pint soured dairy cream or double

dairy cream and 1 teaspoon

lemon juice

For the garnish:-

chopped parsley

 

Preparation Time:- 10 minutes

 

Cooking Time:- 15 minutes

 

Cut steak into strips 2 inches long x ¼ inch thick. Chop onions finely and fry in half the butter in a large deep frying pan until pale golden. Cut pepper into strips, discarding core and seeds. Thinly slice mushrooms. Add mushrooms and pepper to pan and cook for 5 minutes. Remove onions, mushrooms and pepper from pan.

 

Melt remaining butter and heat, then fry meat for about 4 minutes, turning so it becomes evenly cooked.

 

Return onions, mushrooms and peppers to pan, season well, stir in soured cream and blend well. Heat until piping hot but do not allow to boil. Garnish with chopped parsley. Serves 4.

 

Quick Tip

 

A poorer quality steak can be used if it is first cut into strips and marinated in lemon juice overnight to tenderize it.
