Beef Stew with Potato Dumplings Recipe |

You will need :- 1 lb. chuck steak 1 oz. plain flour salt and pepper 1 oz. lard or dripping 1 tablespoon tomato puree 1 lb. leeks
Dumplings:- 8 oz. potatoes ¼ teaspoon salt 2½ oz. plain flour
Oven Setting:- 350°F; Gas Mark 4
Cut the steak into 1-inch cubes and toss in flour seasoned with salt and pepper. Brown lightly in the lard or dripping, and put into a casserole. Add the tomato puree and just enough water to cover, and cook in a moderate oven (350°F; Gas Mark 4) for 45 minutes. Clean and trim the leeks and cut into a large pieces. Add to the casserole and continue cooking for 30 minutes. Meanwhile, boil the potatoes for the dumplings, drain and mash well. Add the salt and flour and mix to a smooth dough. Shape into ¾-inch balls and dip in a little flour. Boil a large pan of salted water and put in the dumplings. Boil rapidly for 10 minutes. Drain the dumplings, add them to the casserole and continue for 10 minutes.
