Beef and Mushroom Casserole with Dumplings Recipe

You will need :-

1 lb. shin beef

1 tablespoon plain flour

salt and pepper

2 oz. lean bacon

1 medium onion

6 oz. large mushrooms

1 oz. butter

Dumplings:-

4 oz. self-raising flour

2 oz. shredded suet

pinch salt

1 tablespoon chopped parsley

 

Cooking Time:- 50 minutes

 

Oven Setting:- 350°C; Gas Mark 4

 

Cut the beef into 1 inch pieces and coat with the flour seasoned with salt and pepper. Cut the bacon in small pieces and fry gently until the fat runs. Take out the bacon and brown the meat on all sides in the fat. Remove the meat and put it in a casserole with the bacon. Chop the onion and cook until golden in the fat, then add to the meat. Just cover with water, cover with a lid and cook in a moderate oven 350°C, Gas Mark 4) for 1 hour. Slice the mushrooms and toss them in butter before adding to the meat. Continue cooking for 30 minutes.

 

Make the dumplings by mixing the flour, suet, salt and parsley with a little cold water to make a firm dough. Form into small balls and add to the casserole. Cook for 20 minutes, and serve with garnish of a little more chopped parsley, if liked.
