Beef and Cider Casserole Recipe

You will need :-

8 oz. haricot beans

1½ chuck steak

2 tablespoons plain flour

2 oz. lard

1 onion

½ pint tomato juice

½ dry cider

1 teaspoon salt

¼ teaspoon pepper

 

Oven Setting:- 350°F; Gas Mark 2

 

Soak the beans overnight in a bowl of cold water. Cut the meat into 1-inch cubes, removing all fat and gristle. Coat with the flour and fry until lightly colored in the hot lard. Put the meat into a casserole. Slice the onion and fry in the remaining fat, then add to the meat. Add the tomato juice and cider, seasoning and drained beans. Cover and cook in oven (350°F; Gas Mark 2) for 2½ hours. Serve with a green vegetable.
