Wiltshire Bacon Cakes Recipe |

You will need:- 2 oz. streaky bacon 8 oz. self raising flour ¼ teaspoon salt 1 oz. butter 3 oz. Cheddar cheese, grated ¼ pint milk 1 tablespoon tomato ketchup dash Worcestershire sauce milk for glazing 4 rashers streaky bacon watercress
Preparation Time:- 10 minutes
Cooking Time:- 30 minutes
Oven Setting:- 400°F, Gas Mark 6
Remove rind from the bacon and grill until crisp. Cut into ½ inch pieces.
Sieve together flour and salt. Rub in butter until mixture resembles fine breadcrumbs. Add three quarters of the grated cheese and all the bacon. Mix milk, tomato ketchup and Worcestershire sauce together and add to dry ingredients. Mix to a soft dough and roll out on a floured board to a 7 inch circle, brush with milk and cut into 8 wedges. Arrange on a greased and floured baking tray in a circle, with the edges overlapping. Sprinkle with remaining cheese.
Bake in a moderately hot oven for 30 minutes. Remove rind from bacon rashers, cut in half and roll up. Place rolls on a skewer and grill until crisp. Place in center of bacon cakes and garnish with watercress. Serves 4.
Quick Tip
Brush day old scones with a little milk and bake in a moderately hot oven 375°F, Gas Mark 5, for 10 minutes to make them fresh again.
