Stuffed Chicken Drumsticks Recipe

You will need:-

4 large chicken drumsticks

salt and pepper

4 canned pineapple spears

4 slices cooked ham

1 oz. butter

1 x 10½ oz. can condensed mushroom soup

8 oz. packet frozen peas

fried new potatoes

chopped chives

 

Preparation Time:- 20 minutes

 

Cooking Time:- 45 minutes

 

Remove bone from drumsticks (see Quick Tip below). Season with salt and pepper.

 

Place a pineapple spear on each slice of ham. Roll up and stuff chicken drumsticks with ham rolls. Secure openings with cocktails sticks. Fry in hot butter until golden.

 

Transfer to a casserole, pour over soup, cover and bake in a moderate oven for 45 minutes. Serve with cooked peas and fried new potatoes sprinkled with chives. Serves 4.

 

Quick Tip

 

To bone out drumsticks, cut round at knuckle end with a sharp knife and pull meat away from bone. Pull meat inside out and pull out bone. Cut away from bone joint.
