Somerset Bacon Chops Recipe

You will need:-

5 boneless bacon chops

2 oz. butter

1 large onion

For the stuffing:-

1 small onion, finely chopped

½ oz. butter

6 oz. cooking apples

3 oz. fresh white breadcrumbs

1 tablespoon sultanas

pepper

1 egg, blended

 

Preparation Time:- 20 minutes

 

Cooking Time:- 30 minutes

 

Oven Setting:- 375°F, Gas Mark 5

 

With s sharp knife, cut through bacon chops from the outside edge to within ¾ inch of the inside edge, to form a 'pocket'.

 

Fry small onion in butter for 5 minutes. Peel, core and grate apples. Mix onion, apple, breadcrumbs, sultanas and pepper. Bind with blended egg. Use the mixture to stuff 'pockets' in chops. Place chops in roasting tin.

 

Spoon over 1 oz. melted butter and bake in a moderately hot oven for 30 minutes, basting from time to time, until chops are golden and tender. Cut onion into rings and fry in 1 oz. butter until golden. Garnish the chops with these. Serves 5.

 

Quick Tip

 

Try making this recipe with pork loin chops. It is equally delicious. Cut chops through to within ½ inch of the bones to make the 'pocket' for the stuffing.
