Open Bacon Pie Recipe

You will need:-

8 oz. self raising flour

pinch salt

pinch cayenne pepper

1 oz. butter

3 oz. Cheddar cheese, grated

¼ pint milk and milk for glazing

For the topping:-

8 rashers streaky bacon

1 oz. butter

1 large onion, chopped

12 oz. tomatoes, skinned and chopped

1 tablespoon chopped parsley

½ teaspoon sugar

salt and pepper

4 slices Cheddar cheese, from a wedge

 

Preparation Time:- 20 minutes

 

Cooking Time:- 30 minutes

 

Oven Setting:- 425°F, Gas Mark 7

 

Sieve together flour, salt and cayenne pepper. Rub in butter until mixture resembles fine breadcrumbs. Add cheese and bind with milk to form a soft dough. Roll out to an 11 inch round on a floured baking sheet. Roll over ½ inch of the dough, all the way round, to form an edge and prick the centre lightly with a fork. Brush with milk and bake in a hot oven for about 20 minutes until golden.

 

Remove rind from bacon rashers and chop 4. Fry in butter with onion for 5 minutes. Add tomatoes, parsley, sugar and seasoning. Cover and simmer for 5 minutes.

 

Place hot tomato mixture on scone dough. Top with bacon rashers in a radial pattern and place slices of cheese in between. Return to oven and bake for 10 minutes. Garnish with chicory spears, orange slices and parsley, if liked. Serves 4-6.

 

Quick Tip

 

Bacon rashers should have the rinds snipped off. The rashers should then be placed in a cold frying pan, without fat, and fried slowly for 6-8 minutes.
