Kentish Bacon Roly-Roly Recipe |

You will need:- 1½ lb. fore hock bacon 1 small onion 1 tablespoon tomato ketchup pinch dried sage salt and pepper 8 oz. packet frozen mixed vegetables For the pastry:- 8 oz. self raising flour pinch salt 4 oz. shredded suet ¼ pint water
Preparation Time:- 15 minutes plus soaking time for bacon
Cooking Time:- 3 hours
Soak bacon in cold water for 6 hours or overnight. Place in a pan of fresh cold water with onion, bring to the boil and simmer gently for 25 minutes.
Remove rind from bacon. Cut meat from bone and chop finely or mince with cooked onion. Stir in ketchup, sage and the seasoning.
Sift together flour and salt. Add suet and mix to a soft dough with cold water. Roll out to an oblong. Spread bacon mixture to within ½ inch of edges. Wet edges, roll up like a Swiss roll. Wrap in greased, greaseproof paper then foil, and steam for 2½ hours. Serve hot with cooked mixed vegetables. Serves 4.

Try using suet crust pastry, instead of short crust pastry as a topping for savory pies.
