Huntingdon Fidget Pie Recipe

You will need:-

1 lb. streaky bacon

8 oz. onions

1 lb. cooking apples

salt and pepper

¼ pint cider

For the pastry:-

8 oz. plain flour

pinch salt

4 oz. butter

2 tablespoons water

For the glaze:-

1 egg, beaten

 

Preparation Time:- 15 minutes

 

Cooking Time:- 50 minutes

 

Oven Setting:- 425°F; Gas Mark 7

                      350°F; Gas Mark 4

 

Remove rind from bacon and dice, peel and chop onions. Core and chop apples. Mix well together and season. Put into 2 pint dish and pour over the cider.

 

Sieve together flour and salt. Rub in butter until mixture resembles fine breadcrumbs. Mix with water to form a firm dough. Roll out and cover pie. Make four cuts out from the center about 3 inches long. Fold back the triangles of pastry to expose the filling. Roll out trimmings and cut out crescents, using a fluted cutter. Brush with beaten egg and place round edge of pastry.

 

Brush pie with egg and bake in a hot oven for 20 minutes, lower heat to moderate and bake for a further 30 minutes until pastry is crisp and golden. Serves 4.
