Hot Bacon Loaf Recipe

You will need:-

1½ oz. butter

1½ oz. browned breadcrumbs

1 large onion, finely chopped

12 oz. cooked bacon, from a joint

½ teaspoon mixed dried herbs

½ teaspoon grated nutmeg

2 oz. fresh white breadcrumbs

1 egg, blended

¼ pint bacon stock

pepper

8 oz. packet frozen cut green beans

 

Preparation Time:- 20 minutes

 

Cooking Time:- 1 hour

 

Oven Setting:- 350°F, Gas Mark 4

 

Grease 1 lb. loaf tin with ½ oz. butter and press 1 oz. browned breadcrumbs round the bottom and sides of the tin. Fry finely chopped onion in remaining butter. Mince bacon, add onion and remaining ingredients except beans. If bacon and stock are not very salt, it may be necessary to add a little salt as well.

 

Turn mixture into prepared tin. Cover with foil and bake in a moderate oven for 1 hour.

 

Turn out, sprinkle with remaining breadcrumbs and serve with cooked cut green beans. Serves 4.

 

Quick Tip

 

Cheap flank bacon gives a great deal of flavor to all kinds of casseroles. Cut it into cubes and add to the casserole with the other ingredients. It can be removed before serving, if preferred.
