You will need:- 3 oz. butter 2 oz. flour ¼ pint milk 4 oz. cooked ham, finely chopped 3 large eggs, separated 1 teaspoon dry mustard salt and pepper
Preparation Time:- 15 minutes
Cooking Time:- 40 minutes
Oven Setting:- 375°F, Gas Mark 5
Melt butter in a pan, add flour and cook for a minute. Remove from heat and gradually stir in milk. Return to heat, bring to the boil, stirring all the time, making a thick sauce that leaves sides of pan. Remove from heat and blend in ham.
Stir in egg yolks, blended with mustard, salt and pepper. Carefully fold in stiffly whisked egg whites. Turn into a buttered 2 pint soufflé dish. Run a teaspoon round the outside edge of the mixture, pushing it inwards to prevent the soufflé spilling over when baking.
Bake in a moderately hot oven for 40 minutes until golden and well risen.
Quick Tip
When making soufflé, never open the oven door while they are cooking as the draught of air may cause them to collapse. It is important always to use the size of soufflé dish given in the recipe.
