Cornish Ham Pudding Recipe

You will need:-

6 thin slices white bread

1½ oz. butter

3 thick slices cooked ham

3 tomatoes, thinly sliced

3 eggs

salt and pepper

1 pint milk

 

Preparation Time:- 10 minutes

 

Cooking Time:- 35-45 minutes

 

Oven Setting:- 350°F, Gas Mark 4

 

Remove crusts from bread and spread with butter. Place slices of ham on 3 slices of bread, top with tomato slices, reserving some for garnishing. Cover with remaining bread slices, buttered side up. Cut each sandwich into triangles. Place in a shallow, buttered ovenproof dish.

 

Beat together eggs, salt and pepper and then blend in milk. Strain over bread and garnish with remaining tomatoes slices.

 

Bake in a moderate oven for 35-45 minutes or until 'custard' has set. Serves 4.

 

Quick Tip

 

Beat eggs by stirring with a wooden spoon. This means that little air is incorporated and therefore a smoother custard results.
