Cheesy Leeks and Ham Recipe

You will need:-

8 medium sized leeks

salt

8 thin slices ham

1½ oz. butter

1½ oz. flour

½ pint milk

6 oz. Cheddar cheese, grated

1 teaspoon made mustard

pepper

 

Preparation Time:- 10 minutes

 

Cooking Time:- 25 minutes

 

Remove outside leaves, roots and most of the green part of the leeks. Wash well in cold water to remove all the grit and dirt (see Quick Tip below). Cook in boiling, salted water until tender. Drain well, reserving ¼ pint of the stock. Wrap slices of ham round leeks and place in an ovenproof dish.

 

Melt butter, add flour and cook for a minute. Remove from heat and gradually stir in milk and leek stock. Return to heat and bring to boil, stirring all the time until sauce bubbles and thickens. Stir in 4 oz. of the cheese and the mustard, season to taste.

 

Pour over leeks, sprinkle over remaining cheese and grill until cheese is golden brown and bubbling. Serves 4.

 

Quick Tip

 

To clean leeks, insert knife about 2 inches from the base end of the leek and pull upwards. Open out and wash thoroughly under a cold tap.
