Braised Bacon with Vegetables Recipe

You will need :-

4 oz. onions

4 oz. carrots

4 sticks celery

1 oz. lard

1 collar or fore hock bacon joint

¼ pint water

1 bay leaf

pepper

 

Oven Setting:- 350°F; Gas Mark 4

 

Peel and quarter the onions and slice the carrots. Cut the celery into pieces. Fry the vegetables lightly in the lard for 5 minutes. Put the bacon into a pan o cold water. Bring to the boil, then drain and put into a casserole. Add the vegetables, water, bay leaf and pepper. Cover and cook in a moderate oven (350°F; Gas Mark 4) for 1 hour 25 minutes. Take the bacon from the casserole, remove the rind and slice the bacon in thick slices. Put the vegetables on a serving dish, arrange the bacon slices on top and serve with mash potatoes.
