Bacon in a Pastry Case Recipe

You will need:-

1 oz. butter

1 onion, finely chopped

4 oz. mushrooms, thinly sliced

salt and pepper

1 vacuum pack sweet cure bacon joint, about 1½ lb.

1 egg yolk, beaten with 1 tablespoon water

For the pastry:-

12 oz. plain flour

pinch salt

3 oz. lard

¼ pint water plus 2 tablespoons

Frosted grapes for garnish

 

Preparation Time:- 30 minutes

 

Cooking Time:- 2 hours

 

Oven Setting:- 425°F; Gas Mark 7

                      325°F; Gas Mark 3

 

Melt butter and fry onion for 5 minutes. Add mushrooms. Fry for further 5 minutes. Season to taste.

 

Sieve flour and salt. Put lard and water into saucepan; bring to boil. Pour on to flour; mix with knife until it forms a ball. Roll pastry out to a circle reserving a little. Spread circle with onion mixture. Place bacon in center. Brush edges with beaten egg; completely enclose joint. Seal edges well; place on baking tray. Decorate with pastry leaves and ball made from trimmings.

 

Brush with beaten egg. Bake in hot oven for 15 minutes. Lower heat; bake for 1¾ hours. If pastry becomes too brown cover with greaseproof paper. Serve with frosted grapes (see Quick Tip below). Serves 4.

 

Quick Tip

 

For frosted grapes, brush small bunches of grapes with beaten egg white. Toss in castor sugar and leave to dry on greaseproof paper. Use to garnish bacon joint.
