Bacon Hot Pot Recipe

You will need :-

1 collar bacon joint

1½ dripping

12 button onions

12 small carrots

4 leeks

stock

1 bay leaf

sprig parsley

sprig thyme

 

Oven Setting:-

350°F; Gas Mark 4

425°F; Gas Mark 7

 

Put the bacon in cold water, bring to the boil and simmer for 45 minutes. Skin the joint and cut the bacon into cubes. Melt the dripping in a flameproof casserole and fry the onions, carrots and chopped leeks until lightly browned. Add enough stock to cover. Put in the bacon and the herbs. Cover and cook in a moderate oven (350°F; Gas Mark 4) for 40 minutes. Take off the lid and continue cooking in a hot oven (425°F,; Gas Mark 7) for 15 minutes.
