Bacon and Beer Casserole Recipe

You will need :-

1 collar bacon joint

1 carrot

1 onion

pepper

1 tablespoon black treacle

1 bay leaf

1 pint ale

1 oz. butter

1 oz. plain flour

 

Oven Setting:- 350°F; Gas Mark 4

 

Put the bacon in the casserole and add the sliced carrot and onion, some pepper, treacle, the bay leaf and the ale. Bring to the boil, skim and simmer for 1½ hours. If preferred, cook in a moderate oven (350°F; Gas Mark 4). Take out the bacon, remove the skin and keep the joint hot. Melt the butter in a saucepan and work in the flour, cooking and stirring for 3 minutes. Gradually add the cooking liquid from the bacon and stir over a gentle heat until smooth and thick. Pour over the bacon. This is a very good winter dish served with parsnips or more carrots.
