Ayrshire Roll Recipe |

You will need:- 4 lb. Ayrshire roll or piece of middle cut bacon 1 oz. butter, melted For the stuffing:- 1 oz. butter 4 oz. mushrooms, finely chopped 3 oz. fresh white breadcrumbs 1 egg, beaten 2 tablespoons chopped parsley salt and pepper 8 oz. packet frozen Brussels sprouts
Preparation Time:- 20 minutes plus soaking time for bacon
Cooking Time:- 2 hours
Oven Setting:- 375°F; Gas Mark 5
Soak bacon overnight in cold water. Wrap bacon round a jam jar and tie firmly. Place in a large saucepan with fresh cold water and simmer gently for 1 hour.
Remove, allow to cool slightly and remove skin. Melt butter and fry mushrooms gently for 5 minutes. Remove from heat and stir in remaining ingredients. Mix well. Remove jam jar and fill cavity of bacon with stuffing. Secure with fresh string if necessary. Make cuts about ¼ inch apart over the fat decoration.
Place bacon in a roasting tin, brush with melted butter and roast in a moderately hot oven for a further hour. Serve with Brussels sprouts. Serves 8.
Quick Tip
If preferred, instead of making breadcrumbs, remove crust from 3 oz. bread and soak in a beaten egg. When soft mash with a fork. Use in stuffings.
