Welcome to A1 Cook Recipes. Home Cooked Food vs Outside Food? When you're away from home you have less control over the way your food is handled, so look out for clean premises. You may not be able to see the kitchen, but if any part of the place looks dirty or run down you can make a reasonable guess that the parts you can't see are no better. In restaurants, the loos give a fair indication of hygiene standards. Is there toilet paper, soap, clean towel or hand dryer. Are the wash basins clean? If the customer loos aren't well kept, facilities for the staff are likely to be even worse- and they don't have soap and clean towels, their hands will be depositing germs on to your food. In sandwich shops, check how the staff handle food. If they pick it up with their fingers, go somewhere else. The same if they or the counter look grubby or untidy. If you're tempted by a supermarket salad bar, remember that food may have been sitting out under the shop lights for hours. Despite the air-conditioning, it is a lot warmer in a shop than in fridge. Even though separate servers are provided, people tend to dip the same one in several tubs, giving any bugs plenty of chance to get around. Coleslaw and other salads have been known to carry listeria when ingredients weren't properly washed and the salad had stood for awhile. Mayonnaise is as good a growth culture bacteria as you could find in a laboratory, so choose salads in vinaigrette-type dressings instead. Avoid those containing meat or fish - buy a packet of ham to go with them instead. If you buy salad later than lunch time, remember that it could have been sitting under the shop's warm lights all day. Takeaways are blamed for a lot of food-poisoning cases. But the true culprit is often the least obvious suspect - not the curried prawns or the sweet-and-sour pork but the innocent looking rice. Rice that's been reheated or kept warm is the perfect breeding ground for bacillus cereus, a powerful food bug that multiples. Even freshly fried rice isn't safe if it was kept for long after the original boiling. So make sure yours is hot and looks fresh and moist, without any sight crust or overcooked grains.
